This is by far the best recipe for Broccoli Cheese Soup I have ever had. You could also use it as Corn and Potato Chowder.
This recipe serves our family of 7 with some to spare.
4 med. Potatoes
1/2 cup Onion
Fresh Broccoli Florets (Frozen substitute well)
Fresh Cauliflower Florets(Frozen substitute well)
1/2-1 cup chopped Carrots
*1: Add these ingredients into a large soup pot and cover with hot water, Boil until tender. Drain
off water into a bowl or other container to use later. (When you get better at this recipe you will know exactly how much to drain off and you won't have to save it in another container.)
*2: Meanwhile, in another sauce pan combine:
2-3 cans of Cream of Chicken Soup
!/2 brick of Velveeta Cheese
*3: Stir FREQUENTLY (scorches easily) until melted
*4: When the veggies are done and the sauce is melted, pour cheese over veggies and then slowly add: previously saved vegetable water until it is a nice SOUP consistency.
*5: Serve warm in a bread bowl if desired. ENJOY!
