Easy Taco Soup

2-3 boneless skinless Chicken Breasts

First start your chicken in a sauce pot and boil for at least 20-30 min. Shred with a fork (When chicken is done it will shred fairly easily)

Meanwhille in a large Stew Pot Combine;

1/2 cup of Onion chopped
2 cans of diced canned Tomatoes (I like to use Mexican Style)
1 can of Tomato Soup
1 can washed and drained Black Beans
1 can washed and drained White Beans
1 can washed and drained Garbonzo Beans (or another kind optional)
1 can diced carrots add water and all
1 can cut Green Beans
1/2 to 1 cup frozen Corn
1 package of Fajetta Seasoning
1tsp. Cajun spices (if you like it a little hotter add jalapenos or red pepper)
1-2 tsp garlic powder
Add chicken (leftover rice is also yummy) and heat untill hot.
Serve with fresh cilantro, cheese, fresh chopped tomatoes, sour cream, and tortilla chips.
Freezes Excellent!
