For the week of December 15-21 Oh theres no place like home for the holidays and it seem it always feels more like home when there are good smells of baking goin' on. So we will focus some attention on those "holiday goodies." Merry Christmas to all!

Southwestern Crockpot Corn Chowder

This takes 8 hrs. in a crockpot on LOW or if you are in a hurry boil the veggies for 10 min. and then put in the crock pot on HI.

6-8 med. potatoes cubed (I like red potatoes)
1-2 cups cubed squash (optional)
1 cup carrots
1/2 cup diced onion
1 can black beans drained and rinsed
1 small can corn
1/2-1 lb. bacon crumbles
Cream of Chicken soup (Family Size) plus one small can on hand just in case its to runny
Water (1/2 the family size can of soup) if you use the speedy method use your veggie water.
1 TBSP McCormick's Southwest seasoning

Add all ingredients into the crock pot and simmer till veggies are cooked through.
